Grandmas Mango

    

 

Grandma's mango ice cream

With pineapple rum sauce
Ingredients:


5 - 6 ripe mangos, peeled, pitted and mashed.

Gives approximately 2 to 3 cups
litre heavy cream
3 tsp. lemon peel coarsely cut
tsp salt
250 g condensed milk


Whip the cream with the sugar until it becomes stiff. Add the mashed mangos, lemon peel, condensed milk, salt and mix it well. Pour into freezer trays or cup and freeze it.

 

 


PINEAPPLE RUM SAUCE


Ingredients:
2 fresh pineapples ( canned pineapples can be used )
1 cup of brown sugar
cup white rum
250 g chopped pistachio nuts

 

 

 

 

Make pineapple juice out of one of the pineapples and cut the other one in small cubes. Simmer 1 cup of pineapple with the sugar until it dissolves and syrup is formed. Add the white rum and let it cool. Put the cut pineapples in a bowl, pour the pineapple rum sauce over it and marinate for several hours. Place a portion of the mango ice cream in a wine glass. Top it with pineapple rum mixture and garnish with 1 tbs.pistachio nuts.
