Kelewele - African Chips
700 g ripe plantains
1-2 tsp salt
1 big size finely grounded fresh ginger
Quart litre vegetable oil
Quart cup of water
Peel the plantains and cut it in half lengthwise, and slice them
like "potato chips". Place them in a bowl. Mix the salt and the ginger in water,
and pour it over the sliced plantain, and mix it. Let it stand for about 12-15
minutes. Heat the oil and fry them (until golden brown) in batches.
Drain them on kitchen paper.
Serve garnished with peanuts.
